Buffalo-Style Shrimp with Blue Cheese Dip

Serves 4

¼ cup flour

½ teaspoon salt

¼ teaspoon freshly ground black pepper

¼ teaspoon paprika

¼ teaspoon garlic powder

2 to 3 tablespoons grapeseed oil

12 large shrimp, peeled and deveined*

3 tablespoons unsalted butter, melted

1 tablespoon sweet chili sauce

1 tablespoon hot chili sauce

1 stalk celery, cut into strips

  • Blue Cheese Dip (recipe follows)

 

Preheat Grill

1. Combine flour, salt, pepper, paprika and garlic powder in a small bowl.

 

2. Stir to combine and set aside.

 

3. Place a flat grill screen on the preheated grill and allow to heat.

 

4. Dredge shrimp in flour mixture and shake off excess.

 

5. In a separate bowl, place the grapeseed oil and toss the seasoned shrimp in the oil to coat.  Place the coated shrimp on the grill screen; cook on each side 1-2 minutes.  The shrimp will curl slightly and turn bright salmon in color.  Do not over grill at this point or the shrimp will become tough!

 

6. Combine melted butter, sweet chili sauce and hot chili sauce in a medium-mixing bowl.

 

7. Coat shrimp thoroughly with butter and chili paste mixture; serve while hot with the Blue Cheese Dip and celery sticks!
